Every bottle of wine from Lopez de Heredia is a testament to their philosophy of respecting the soil and working with nature. Their process begins in 72 large oak vats, some of which have been in use for over a century. After fermentation, the wines are aged in 14,000 handmade American oak barrels and stored in underground cellars at the perfect temperature and tranquility for a minimum of 3 to 10 years. The wines then acquire their smoothness and bouquet during the bottle aging process that follows. The results are wines that are unique in character and flavor, with a soul that has been "educated" over a minimum of three years in barrels.

At Lopez de Heredia, wine is not just a product, but a pedagogic act. The aging process is seen as a crucial step in the development of each bottle, and patience and attention to detail are key. Crianza wines are aged for a minimum of 3 years, while Gran Reserva wines are aged for at least 10 years. Rushing the process would destroy the biological process that gives each wine its special character.
